What?! It can’t possibly be my last full week of summer!! 😦 But sadly it is. My wonderful, life changing summer is coming to a close. Will it go out with a bang? Sort of…

I’m running a 5M race on Labor Day in Ocean City at the beautiful New Jersey Shore. And then what? probably Bio or english essay… not so much a bang but ya gotta do whatcha gotta do!

This weekend was a weekend of Mom-daughter time!

Late summer veggie soup was made compliments of How To Cook Everything by Mark Bittman

Corn, zucchini, tomatoes, beans, red pepper, and basil! with a little parmesan of course!

Sunday we took a little trip into good ol’ Philly to see a special exhibit on Cleopatra at the Franklin Institute.

KNOWLEDGE!!!

Then we chilled at Logan Square in the 90 degree heat and watched the little kids play in the fountain.

And of course there was food involved! We had a gift card to Triumph Brewery and not ones to pass up a free meal we headed on over!

I normally avoid bars at all costs because I feel like a total poser but Triumph is a super nice place and despite being a Brewery it is also kid-friendly so I didn’t feel too awkward…

Ok kinda blurry but you get the idea! Bad lighting is my excuse!

I had a mixed Greens salad with cherries, pecans, and some other stuff with grilled chicken. I went the healthy route! It was yummy but it could have been way bigger.

blurry!

Madre on the other hand went all out and got a burger with grilled onions which she said tasted like the burgers she had as a kid. So basically she loved it. And IΒ we bothΒ enjoyed her fries. πŸ˜›

Can you say saturated fat? πŸ˜›

On to today…

Breakfast was classic cereal deliciousness.

and some suber-sweet n’ juicy Β local honeydew.

Lunch was beyond filling! 4 hours later I am still not hungry!

Huge Green Monster SIAB: it came out to 3 full bowls!

Flatout wrap with cottage cheese, cinnamon and sugar, raisins, and blueberries

The frenimies situation with food has been improving since last we spoke, but it is far from the BFFs we once were. I am going to this woman who works at University of Pennsylvania who is studying weight loss and stuff (I’m actually not entire;y sure what she does) on Thursday so hopefully she can help us out! Food and I need some serious relationship counseling!

This week I gained a pound as testament to that. Oh well just gotta roll with the punches for now…

Tomorrow is the first scrimmage for volleyball so it will be a busier day for moi as I am the manager! I can’t guarantee a post but I will do my very best!

Now I am off to eat! I may not be hungry yet, but I need my fuel for kickboxing tonight!

Today has been cool and rainy and I can’t lie it’s getting to me a little bit.

Getting up this morning was far from easy. I over slept by a half an hour. It really doesn’t matter if I get up a little late since it’s not like I have to be anywhere, but it just throws off my whole morning. Although since I get back from Colorado I have been really tired in the morning. Before I left I could easily get up at my normal time (7:30). Now its a struggle every morning. WTF! The icing on the cake is that my legs are really sore which makes it literally painful to get up πŸ˜›

Ok enough complaining… on to the food!

Let’s go back in time a little to dinner last night. I had a Healthy Choice dinner.

I added some extra veggies (broccoli, kale, and orange pepper) and it was quite yummy! This is funny to say but I haven’t had pasta in a really long time!

This morning I had my Green Monster as a post-run snack since I was in rush to get out and run. My run wasn’t that great though. I guess b/c it was pretty cool my body didn’t have to work as hard to keep me cool so I only burned about 500 calories. I know what you are thinking now. “500 calories is really good! What are you talking about you crazy girl!” I know that 500 calories is really good, but I normally burn more like 550 which is good b/cI never know how many calories I will burn at kickboxing. Some days it’s really hard and I can burn almost 600 calories but some days its slower and I am closer if not below 500 calories. So I like to burn a bunch of calories when I run so that I can easily reach my 1000 calories per day goal. Hopefully today will be good though. The last few days of kickboxing have been hard so fingers crossed the pattern will continue!

My lunch today was soup, salad, and toast: the perfect rainy day lunch.

The soup started out the way you make egg drop soup: by pouring a beaten egg into simmering broth. Then I added frozen corn, frozen spinach, tomato, a tiny pinch of red pepper flake, dried basil, and teeny tiny bit of butter, and these TVP bits from MorningStar that are like fake ground meat.

My salad was lettuce, yellow pepper, tomato, crasins, and pea sprouts. The dressing was just a little bit of EVOO, lemon juice, and agave nectar.

My toast was Cinnamon Raisin Ezekiel bread with almond butter, honey, and some banana.

All in all lunch warmed me up and was super delicious!

This afternoon is more Bio reading and maybe even watching a little TV! I am kinda tired and the idea of just relaxing my brain for a little sounds really nice.

Hope the weeks is treating you better than it is me!

Hello everyone!

I’m so excited right now, I’m typing this from my mom’s phone! They have apps for everyrhing now!

Don’t expect a very long post like this because just typing this has taken me forever!

I’m in Minneapolis! We got here wednesday afternoon. We ate dinner that night at this awesome pasta place called Broder’s Pasta Bar. We ate at the “bar” which just looked like a bar but there was no alcohol. From the bar we could watch the kitchen which was pretty cool since being a chef is on my possible career lis

I had lasagna with lamb, mint, and this creamy tomato sauce. It wasn’t what I was initially planning on getting but our waitress said it was out of this world so I had to try it. It was amazing, rich, but awesome.

Yesterday, Thursday, we visited Macalester College in St. Paul. I loved the college and it may be my #1 choice. We ate lunch ate this little Afgani place. They had a $10 lunch buffet which was an awesome deal! I had dahl, this mush of Mung beans and stuff, pita, hummus, and Afgani salad which was onions, cucumbers, tomatoes, and some other veggies with lime juice. I LOVED everything there and if I go to Mac it might become my lunch spot πŸ˜›

Dinner was nothing special. We couldn’t find anywhere interesting so we ended up a a kind of touristy place called the News Room. We shared an emanada for an appitizer, then I had a really basic salad with walnuts, grilled chicken, and goat cheese. It was ok but nothing special.

Dessert was cool though. Our waitress reccomended their Root Beer cookies so we figured we had to them. They were fresh baked (they bake them when you order them) and so soft you needed a spoon for the middle (not undercooked though) and they really tasted like root beer. Apparently they use root beer extract to get the flavor.

Now we are in th car on our way to see Carleton College which is about 45 minutes from Minneapolis.

Tomorrow we fly to Colorado! I can’t believe that in less than a week I will be backpacking! I’m getting nervous but trying not to think about it too much!

So that about all I have for you guys right now! I promise lots of pictures when I get back! I will try to update you guys on how Boulder is before I venture off into the wilderness!

Hope all is well with everyone!

Today was surprisingly busy so I’m sorry to say I don’t have many pictures of what I ate because most of my eating today was done on the go.

This morning I went to the barn and hung out with my horse DJ for a little bit.

Yup that’s him!

I had to leave early though because I was getting a hair cut later and and a trip to the gym beforehand was required.

The gym was just torture today. It was super hot inside, and I just didn’t feel like running. I tried the elliptical and then remembered why I stopped using it in the first place, it’s boring! I went back to the treadmill and eventually I was finished, oh what a relief!

My hair cut today was very impromptu (as in scheduled this morning). I have been a little bored with my hair for the past few weeks. I have had the same hair cut for almost a year now without much change so I was ready to mix it up! I decided I didn’t want to wait until after I got back from my last trip so this weekend was my last chance to get it cut!

My previous hairstyle was inspired by this photo:

(Ew fake tan!) Although it was curlier on me because my hair is pretty curly naturally and I also got a perm a few months ago to make it even curlier.

The new hair cut I wanted looked something like this:

It looks really good! It has been awhile since I had bangs though so they will take some getting used to. My stylist gave me less bangs than she has in the picture because of my curls. My bangs are quite curly, but I think they look cute and I can always straighten them if I want!

So after my haircut my mom and I went shopping!

First stop was the shoe store for new running shoes. The running shoes I have been wearing I got for dirt cheep on the sale rack at Famous Footwear or someplace similar. They were certainly not fitted by someone who knew what kind of shoe would be right for me! But they were cheep and now they are old! So the time for new (and better) running shoes had definitely come.

We went to a real running store and I walked around so the woman could see how I walk (apparently I underpronate, I walk on the outsides of my feet), and she brought out 3 pairs for me to try on.

These babies were the winners!

Were they cheep? No. Comfortable? YES! I can’t wait to try them out tomorrow!

Next we hit Whole Foods. Where I got freeze-dries peaches.

Isn’t that cute!

They are like peaches on flavor steroids! So yummy!

I also got peach preserves. I guess I was on a bit of a peach kick, can you blame me?

Then we went to the regular super market, they have cheeper produce that is just as good, and other things worth buying!

I got protein powder because I think maybe I”m not getting enough protein since I have been eating less beans and greek yogurt lately.

So I can add this to all sorts of things.

I also found these bars!

They are certainly not all natural but you can’t beat the nutritional stats! 100 calories, 6 grams of protein and 5 grams of fiber! Normally all the high protein bars are also high in calories so these are perfect! I have yet to try one though, so hopefully they taste ok πŸ™‚

When we got home it was dinner time. We were both hot and tired and the only thing that sounded good was salad, so I whipped up a huge salad!

There is tons of stuff in there so to name a few there are tomatoes, corn red pepper, broccoli, red beans, chickpeas, light Baby Bel, and some flax seed for good luck. I also had a toasted Flatout (which is basically a giant cracker) with peanut butter and my new peach preserves for some carbs. Ahh so refreshing!

Now I am one tired blogger from my busy day!

I can’t believe that I am leaving again on Wednesday! Summer goes to fast!

How has your summer been so far? Done anything interesting?

Any suggestions for ways to use my new protein powder?

Nighty- night!

Hello Everyone!

Happy Belated 4th of July to everyone from the USA!!

For those of you who don’t know, my official weigh-in day is Sunday. I weigh myself right after I get up so that I don’t eat or drink anything before. Also for any who don’t know, I have been stuck between 161 and 156 (25 and 30 pounds lost) for about 7 or 8 months. Yeah it’s been beyond frustrating! Well yesterday I got up and weighed myself like I do every Sunday. I have been eating well and working out really hard as you can probably see, but after so many good weeks with bad weigh-ins I wasn’t expecting much. I lost 2.4 pounds! Whoohoo! I normally lose about .5 to 1 pound a week but in the last 3 weeks I have lost over 2 pounds twice! And I was 156.6!!!! I HAVE OFFICIALLY LOST 30 POUNDS!!!!!!!!!!!!! I have been waiting 7 months to see that number and I honestly couldn’t even believe it when I saw it, I still don’t think it has really hit me. I am so happy!

In other news, yesterday my mom and I took a trip up to Princeton, NJ (home of the Ivy League University) to go hiking with this girl who is a member of a group of girls I will be going backpacking in Colorado with at the end of July. We are the only girls going who are not from Colorado so we thought we should meet since it just so happened we only lived about an hour apart. We went for a gorgeous hike in the woods outside of Princeton, although it was over 90 degrees even in the shade I still had fun!

We passed by this yucky little green pond with the funniest “No Swimming” sign I have ever seen

Why anyone would even want to swim in there is beyond me! Other than heat stroke πŸ˜› the only danger came from some geese who thought we were a little to close to their babies for our own good. They didn’t attack but they were hissing at us!

After our run in with the geese My new friend Lissy (short for Elisabeth), our moms, and I went into Princeton for some lunch. We went to Panera Bread where I had the Strawberry and Poppyseed chicken salad which was only 280 calories and so delicious! It had strawberries, pineapple, blueberries, oranges, and pecans! ( I forgot my camera back in the car so this is not y picture, this is the link from where I got the picture: http://cookingwithkate.files.wordpress.com/2009/06/cimg5792.jpg just making sure I don’t credit for it)

After the salad we got some amazing artisan ice cream, I had vanilla and dark chocolate sorbet it was soooo good. Certainly not low calorie but I didn’t feel guilty I had decided that I was celebrating my 30 pound loss!

After lunch our little group split up and my mom and I walked around Princeton’s campus together. The campus is so beautiful, and very Ivy League.

With some pretty cool study spots!

After some major walking we came upon this really cool frozen yogurt place (grrr I can’t remember its name). It had tons of flavors of frozen yogurt that were all made from fat-freee yogurt that was really low calorie! You got to pick as many flavors you wanted ( I had plain tart and yucca whichI had never heard of but it was really good, and purple :P) then they had tons of toppings to choose from including fresh fruit! I had blueberries, blackberries, strawberries, pineapple, kiwi, cookie dough, brownie bits, mini reese’s peanut butter cups, and crushed Oreo cookie.

I only had a small amount of the unhealthy stuff but I figured how often to I get to have that stuff in my yogurt? Never! So why not right?

It was so delicious! I wish there was a place like that near my house it was such great healthy treat!

I love little day trips like that with my mom! We can get along really well if we are both in a good mood, and Princeton is such a nice town, even in 95 degree heat! It was a great way to spend the 4th, normally we are camping on the 4th but we couldn’t get our camping spot until later this year.

Speaking of camping… I leave tomorrow! I will try to post if I can but I highly doubt I will be able to post until I get back 😦 I’ll have a huge post when I gat back though with pictures of Milwaukee, Beloit, and our campsite with all the amazing and plentiful food!! I will miss you guys!

Hope you are all enjoying your summer! Anyone have any super cool plans?

Elli

So yesterday I was really bored, haha no surprise there. SoΒ I went into my room, looked around, and it was so messy!! Well actually it wasn’t to bad in reality but I’m something of a neat freak so ti was messy enough to warrant some major organizing. And boy did I organize!!! I went through my drawers and my closet and and pulled out everything that doesn’t fit anymore (yay!) and everything I don’t wear (time to be honest with myself). My mom and I have this rule that if I just put all the clothes into a trash bag she will take it to Goodwill no questions asked or should I say no being mad at me because she knew I would never wear that *insert clothing item here* but I said I would and then actually never did πŸ˜›

I filled up a whole garbage bag with clothes for Goodwill! Whoohoo!

Then I moved on to bookshelf. I have sooo many books many of them from as far back as 7th grade! I love my books and because of that I just hold onto them although I know I will never read most of them again. So it was time to be honest with myself… I have to get rid of some of these books. My bookshelf was full of so many old books there was no room for all my new books! You might be thinking “Hey silly! Ever heard of the library?” Well I do go the library but sometimes I don’t want to/can’t wait for a book to be available. Anyway I digress… I went through my personal library and filled a laundry basket with books I can get rid of! It was definitely time πŸ™‚

So here’s what I was thinking… Call me sentimental but I really want these books to go to someone who will read them. So I was thinking I could post a list of the books I have to get rid of and if anyone wants them just reply to the post or email me and I could send them to you. Obviously I only have one of each book so it would be first come first serve but I could do that if there is anyone who would be interested. Otherwise I will probably bring them to a book exchange or used book store.

On to today…Β as you might have guessed I have done nothing all that exciting today. All I can say is TGIF!! Is it sad that I am still saying that even though it’s summer?

Breakfast was the usual πŸ™‚ Then I went for my run… which sucked! Here’s why…

*I really don’t mean to sound racist here or anything so please don’t take it that way* The development I live in hires landscapers (yes they are latin american, not that I’m sure it matters) to do things on the public property like mow the lawns and weed whack etc… Last year they would always be out when I would go for my run. I don’t know if they really took any notice of me but sometimes I felt like they did and I just always felt really uncomfortable running past them although I know they will leave me alone. there is no really way to avoid them because my development is small and the only main street is a circle so when I run around it I am guaranteed to pass them 3 or 4 times. However, last summer I was running later in the morning (10:00 or so) so I thought/hoped that since I am now running at 8:30-9:00 I would miss them. Last week I ran all week with no sign of them and same with this week… until today. I stepped outside and there is was, the tell-tale sound of their giant lawn mowers and weed whackers mixing with the birds singing. I ran anyway, but it is so much less fun when I feel so uncomfortable… it made my run exhausting instead of exhilarating. I have to find a way around this problem…

On a cheerier note my lunch was superb! I had veggie pizza on toast. I rolled out 2 pieces of bread with a rolling pin to make them nice and thin. then I toasted them so they were crispy. I sauteed some onion, garlic, red pepper, and broccoli with a itsy-bitsy bit of EVOO. Then I put tomato sauce (I heart Prego!) on the flat toast, next the veggies, then some part skim mozzarella cheese and baked it in the toaster oven until the cheese was all gooey and melty πŸ™‚

Along side that yumminess I had a refreshing little salad πŸ™‚

with lettuce, red pepper, the extra sauteed pizza veggies, dried cranberries, blueberries, EVOO, red wine vinegar, lemon juice, and a squirt (hehe I love that word :P) of agave nectar. It was all delicious!

So now it’s back to hanging around waiting for my lovely madre to get home so I can go run some more at the gym!

XOXO
