Ahhh!!! I know, I know I basically disappeared for the month of March, it was a busy month for me and while I wanted to log I just couldn’t find the time to really sit down and write anything for you guys…

So what’s new?

Well I wouldn’t have called March a particularly exciting month for me some things have definitely changed. First, I got my braces off!!! I am so glad to be rid of those things. On the downside now I have to wear my retainer which is probably even more annoying than braces and I’m not sure it fits right, which means I have to trek all the way back to my orthodontist this week to make sure it does.

In other news I am still on Weight Watchers with little success. I am tracking everything I eat, working out (cardio and strength) and going to meetings yet I have gained almost every week! I’m not going to lie and say that it hasn’t been seriously frustrating at times. On one hand I am used to trying really hard to be “good” and not seeing results, on the other hand its Weight Watchers! I should be losing weight with them if I do everything right! I do feel like I am getting great support there regardless though, the leader and all the other people there are so friendly and encouraging.

To maybe try to understand why I am struggling to so much I have an appointment in a few weeks with an endocrinologist. I’m not getting my hopes up, but it would be nice in many ways if there was something medically wrong with me that explains why it is so hard for me. It would mean a definitive answer and solution.

I don’t have any new food to show you guys but here are some old meals of mine!

Mediterranean Beef Stew from Weight Watchers.

Salmon with dill sauce and sautéed spinach and tomatoes also from WW.

Fish has become a pretty regular meal here, its quick, yummy, healthy, and not chicken 😛

Eggplant Lasagna, this is God’s food I swear! This is what I want to have for my last meal if I get to choose… I cannot adequately express how deep and passionate me love to this lasagna is.

Chicken with fennel, pine nuts, and raisins, this would have been really amazing but despite being cooked for-ev-er the chicken wasn’t cooked enough which is just ewwy.

With green beans and cauliflower puree, I loooove cauliflower puree! probably even more than regular mashed potatoes…

I promise I will get back in the habit of photographing my meals so I can share them with you guys, we have been cooking a lot more lately so I have a lot to share!

In the non-food/weight-loss world things have been improving also. This winter was pretty bad for me, my mood was pretty generally low, but in the last month or two I have been improving. I don’t really know what changed but the days just feel a little easier again. Also (and this probably has helped my mood) there’s this guy…

Yup a guy. His name is Jordan, we have been friends for a while, and I’m not really sure when I realized that I liked him. He is quite smart, and I think that has to do with it. I may not be a genius or anything but I am relatively smart and it’s nice to talk to someone who is on my level and maybe even smarter than I am. He challenges me and I think I like that. I alway’s kind of thought he felt the same way but I was never sure, until recently. Lately we have been texting a lot and we have hung out a few times. The biggest proof was that he asked me to JDD or Junior Dinner Dance (aka Junior Prom). I obviously wanted to go with him, but he doesn’t normally go to school dances and I thought I would have to drop hints left and right to find out if he was going. But he surprised me and asked me totally unexpectedly without any provocation! I have never had a boyfriend or even the possibility of a boyfriend before so this is fun for me… 🙂

JDD is April 29th and I promise I will post pictures!!

I hope that everyone is having a great spring!! It’s supposed to be warm here this week!!!

xoxo

So a while ago I got a request to do a blog about what I eat in a day. I’m sorry to say that it has taken me this long to get that blog up but it required remembering to take pictures of everything (I am prone to remembering I had to photograph something right after eating it), and then getting all those photos into a blog. But better late than never right? So here you go my day in food…

I start out pretty much everyday with the same breakfast (not that much has changed :P)

Now, however, breakfast starts out with an orange and a grapefruit, segmented, squeezed, and savored!

followed by…

Quinoa and light soy-milk with banana and applesauce to sweeten it, and pumpkin, cinnamon, ground cloves, ginger, and nutmeg and dried cranberries on top! I look forward to this everyday. It is so yummy and filling.

At school I have a mid-morning snack at about 8:30 to 9:00 ( I eat breakfast at about 6).

This is my favorite snack. they are 100 calories and have 6 grams of protein and 5 grams of fiber and literally taste like a 3 musketeers bar only better.

Lunch is salad with turkey, broccoli, red pepper, tomatoes, and mango salsa (normally but not in this picture)

the dressing is just balsamic vinegar, olive oil, a little bit of agave syrup, salt, and pepper!

I also have some fruit, normally grapes, oranges, or apples and then either 100 calories of crackers ( I weigh out 100 calorie portions) or 100 calories of pretzels. Lunch is normally at 11:30.

When I get home from school at around 3 I have another snack

I start out with a VitaTop in one of many flavors, toasted.

The rest of my snack is an apple and some grapes with cottage cheese

I will also occasionally have a Baby Bel cheese and/or a Rye Vita Cracker if I get hungry again before I work out.

Dinner is often some kind of soup

Or I also will have other things like frozen meals (there are some really great natural ones at my local super market) or an egg white omelette.

The biggest change in how I have been eating is that I used to always have toast or something with my soup and eggs and not I am not having that. For me a lot of those extra calories that were keeping me from losing weight came from carbs so by cutting out some of the carbs in my diet I have been losing weight better. I still have carbs but I try to avoid too may “dry carbs” hence the quinoa instead of cereal for breakfast, salad with some crackers or pretzels rather than a sandwich, and some rice in my soup instead of bread on the side.

Dessert is always a chocolate Vitatop or Vitamuffin 🙂

So there you go!

In other news this week I did a little bit too much snacking but nothing major. I gained .8 this week according to my frenemy the scale. I am not sure how much I really gained (if any though) because I did a boot camp at the place where I kick-box yesterday and am quite sore from that. And I know that when you are sore it’s from little tears in your muscles and that makes you retain water and on top of that I drank a ton of water yesterday. Maybe I am just making excuses but I do think that could be a factor because I feel like I look thinner. I am still going to work on not snacking so much this week though. Just taking it one day at a time.

On that note I cam to a little realization this week. I have been really frustrated with my weight especially today when I was hoping to see 153 (losing 1 pound) and instead say 155. I can still remember that feeling of seeing 151 and was frustrated that I am not there.  But I think I have to stop thinking about trying to get back there and just treat this not as losing recently gained weight and just as losing weight like normal. I can’t be impatient with myself. Again I am stuck in the past where I was a different weight instead of just focusing on where I am now. I have to forget that I once weighed 151 and just focus on what I weigh now. I’m not sure that makes sense like it does in my head but that is what I have been thinking…

I got frozen yogurt with my friend again Friday and that was so much fun. Afterwards we went to a coffee shop nearby and had tea and some cookies. It was so nice to just sit and chat with her again! We never see each other in school so its easy to forget how much we have in common. And not just that we both love purple but we have very similar views of the world. I can have conversations with her that I couldn’t have with just about anyone else I know, especially from school.

Speaking of school it is about to get really stressful… Midterms are the week after next, but this week is when all my classes that require an essay for the midterm are giving the essay. So I will have an english essay, a psych essay, and a history essay. I am not at all looking forward to them. They are just theses 3 big looming clouds that I can just see on the horizon and am totally dreading. I will study as best I can for them obviously but that doesn’t really make it less stressful.

To add to the stress I am taking the SATs next Saturday. I have been studying for the math section but that doesn’t do much to help my confidence. I am lucky that the college I most want to go to, Smith, doesn’t require SAT scores so if I bomb them I can just not send in the scores, and I can also take them again, but still 4 hours of testing is not something I think anyone looks forward too.. And then Midterms start that following Monday with my hardest day: AP Bio and AP Psych… ouch!!!

So that is what is going on in my life! Today my mom and I are going food shopping and I have a french project I should work on, I have to read the Miller’s Tale from the Canterbury Tales for english ( I loove them though so this won’t even be hard!), and I need to keep studying for the SATs! I also have to study for my history essay especially and read some of the psych textbook… thank goodness I have tomorrow off from school for Martin Luther King day.

I hope everyone has had a happy and delicious week! If the essays and SATs don’t kill me I will let you know how they go!

Elli 🙂

…was long. I read a ton of bio and Brave New World. The day just seemed drag on. It was oddly cold (no warmer than 70) and so I just felt slow and sleepy. It was  a day for tea and a good book, not summer reading, bio, and artificial light.

I did do the tea thing though! Mostly because I was really cold but it was so comforting too!

Yummmmm

In my favorite mug no less

Lunch was chocolatey overnight oats. With strawberries, blueberries, Kashi Golean, protein powder, some cottage cheese, and plenty of coco powder! It was majorly filling!

By 3:30 my brain and my belly desperately needed a snack (brain food!).

So I gave them an Apple Cranberry Bran Muffin (only 80 calories!) from Trader Joe’s with cottage cheese and pumpkin butter on top. I found the pumpkin butter in the back of a cabinet unopened. It’s so yummy and pumpkin-y!

And of course a good ol’ bowl o’ fruit (a peach, cherries, and strawberries)! Because no meal is complete with out fruits or veggies.

*drooling*

After a kick-ass kickboxing workout I wanted some major FOOD!

My creative juices were flowing during kickboxing (along with the sweat :P) and I dreamed up this beautiful thing.

*sings* You are so beautiful, to me...

Kidney beans, corn, onion, green and wax beans, canned tomato sauce, yellow pepper, and extra sharp cheddar… in a Flatout wrap and cooked in a “panini maker” (2 pans) and a salad for some freshness and green-ness.

All in all today was successful. I read a ton and ate some super good food! Now I am half delirious from being tired! I don’t know how I’m going to wake up at 5:30 when school starts. How I manage to get good grades with so little sleep is beyond me.

Nighty-night!

E

Today has been cool and rainy and I can’t lie it’s getting to me a little bit.

Getting up this morning was far from easy. I over slept by a half an hour. It really doesn’t matter if I get up a little late since it’s not like I have to be anywhere, but it just throws off my whole morning. Although since I get back from Colorado I have been really tired in the morning. Before I left I could easily get up at my normal time (7:30). Now its a struggle every morning. WTF! The icing on the cake is that my legs are really sore which makes it literally painful to get up 😛

Ok enough complaining… on to the food!

Let’s go back in time a little to dinner last night. I had a Healthy Choice dinner.

I added some extra veggies (broccoli, kale, and orange pepper) and it was quite yummy! This is funny to say but I haven’t had pasta in a really long time!

This morning I had my Green Monster as a post-run snack since I was in rush to get out and run. My run wasn’t that great though. I guess b/c it was pretty cool my body didn’t have to work as hard to keep me cool so I only burned about 500 calories. I know what you are thinking now. “500 calories is really good! What are you talking about you crazy girl!” I know that 500 calories is really good, but I normally burn more like 550 which is good b/cI never know how many calories I will burn at kickboxing. Some days it’s really hard and I can burn almost 600 calories but some days its slower and I am closer if not below 500 calories. So I like to burn a bunch of calories when I run so that I can easily reach my 1000 calories per day goal. Hopefully today will be good though. The last few days of kickboxing have been hard so fingers crossed the pattern will continue!

My lunch today was soup, salad, and toast: the perfect rainy day lunch.

The soup started out the way you make egg drop soup: by pouring a beaten egg into simmering broth. Then I added frozen corn, frozen spinach, tomato, a tiny pinch of red pepper flake, dried basil, and teeny tiny bit of butter, and these TVP bits from MorningStar that are like fake ground meat.

My salad was lettuce, yellow pepper, tomato, crasins, and pea sprouts. The dressing was just a little bit of EVOO, lemon juice, and agave nectar.

My toast was Cinnamon Raisin Ezekiel bread with almond butter, honey, and some banana.

All in all lunch warmed me up and was super delicious!

This afternoon is more Bio reading and maybe even watching a little TV! I am kinda tired and the idea of just relaxing my brain for a little sounds really nice.

Hope the weeks is treating you better than it is me!

Elli 🙂

Ugh I wanted to make this post yesterday but it just didn’t happen, sorry guys!

I’m not going to show you guys every meal because 1) I don’t think you don’t really want to read about everything I ate for the past 2 days and 2) I don’t feel like writing everything I ate, so I’m going to stick to the highlights!

Sunday morning I made my very first Green Monster! I was so excited to try one and I figured it would be the perfect time! I always have pancakes sunday morning but they don’t give me a lot of energy for my run so a Green Monster was perfect!

The bubbles looked a little crazy but it was sooooo refreshing and energizing! I have had one for breakfast yesterday and today and I love it!

Since we are on the subject (sort of) I am giong to take a moment to introduce to my blender.

His name is Warren (because he is a Waring Blender :P). Yes I named him, and I’m ok with that.

There are 2 reasons why I feel you guys should meet Warren. 1) because now that I am making Green Monsters he is an active member of my life and 2) because he is over 40 years old.

Yes, I typed that right and no, your eyes aren’t failing you. He was my grandma’s, then my mom’s, and now he is mine.

Some of you might be thinking “40 years! Its probably time for a new and better blender, don’t you think!” Well here is what I have to say to that.

They just don’t make blenders like they used to. Warren may only have 2 settings “lo” and “high”, but he is way more powerful than any blender you could get today, especially one within my price range. He is also in amazing shape! He is quite handsome for a 40 year old blender and he does his job better than any young blender could!

So now you’ve met Warren we can move on to Sunday’s dinner. Sunday was one of those great days where you just do absolutely nothing! I went for a run, and then my mom and I watched cooking shows for most of the day! It was soo nice and relaxing!

When dinnertime rolled around I realized it had been what seemed like forever since I cooked something from scratch without a recipe!

The creation I came up with was so delicious! Warm roasted vegetable and pasta salad.

While the pasta cooked, I roasted zucchini, onions, garlic, tomatoes, and red peppers, then mixed the veggies and the pasta with some arugula and lettuce. Ohmygosh it was so good! It has been ages since I had pasta and I didn’t even realize how much I had missed it until I ate this!

Monday it was back to the normal routine. Cereal and green monster for breakfast.

Then my run, which would have been perfect if it hadn’t poured rain for 10 mins! My brand new sneakers got all wet 😦 but they survived just fine so no worries! (They are super comfy and awesome btw!)

Lunch yesterday was a veggie burger with white bean hummus, fresh and sun-dried tomatoes, red pepper and arugula

with some sugar snap peas on the side for some crunch,

AND a yummy little salad, with tomatoes, peppers, blueberries, and raisins, with EVOO and lemon juice for dressing.

Dinner was another creation of mine.

I have a ton of kale for my green monsters but since I am off to Minneapolis tomorrow I wanted to use some of it up with dinner so it wouldn’t go to waste while I was gone!

The solution was kale with quinoa, yellow pepper, and soy saussage

I caramelized some onions and garlic then sauteed the peppers for a few minutes then added the kale and some water and let it cook down until it was soft but not mushy and still really vivid green. Then I mixed in the quinoa and the sausage and voila! It was so delicious! and so easy!

Today, my morning run seemed like it was going to be awful. I was eating my breakfast and then I heard the landscaper guys outside, remember them? (An epic cleaning spree and a bad run… « 16 and Losing It.) I really didn’t feel like running past them in my spandex and tank top, even if they do leave me alone. So I decided to brave the unknown and run in the next development over! I never have never done this because I was always afraid I would get lost, but it turns out it’s a circle so I can’t get lost! My run was still hard because my muscles are pretty tired form kickboxing last night, but at least I could run in peace, and it was nice having different surroundings for once!

Lunch has not happened yet today but the plan is to have veggie pizza with something on the side, but I haven’t totally decided what yet. If all goes well I will make another post today and then you can find out!

Tomorrow my mom and I are going to Minneapolis! I am so excited! I love traveling and I’ve already found an Indian restaurant in Minneapolis that we are going to try!

I promise I will do better with photos this trip! No more forgetting my camera! I always feel a little silly sitting in restaurant taking pictures of my food but I will do my very best to get over that so I can show you some of the amazing food I’m sure we’ll eat! And I will of course have some amazing photos of my backpacking trip!

I may be able to post during some of our trip but I’m sure there will be very big posts with I get home!

Hope everyone is enjoying their Tuesday!

Elli

Happy Thursday Everyone!

Today is my official day off from working out. I love my day off ,but I also kind of dread it because I love to workout and I feel really lazy when I don’t. I’m also normally more tired in the morning without my morning run. Today, however, I had the pleasure of paying a visit to my orthodontist to get my braces tightened (oh joy)! I have had my braces on for over 3 years with no apparent end in sight despite that fact that I am in the “end stages,” as they told me this morning. Apparently the end stages can last 6 months or possibly more though… grrr.

So why did I tell you that little story? Because now my poor little bottom teeth hurt from being manhandled by the orthodontist.

This happens pretty much every time and the treatment is always that same, plenty of Aleve and soft foods. So the next few days will mean lots of soup and oatmeal!

Before we get to today’s food, though, I have to tell you about the dinner I made last night. Aside from being the first meal I have cooked in what feels like ages it was pretty darn good if you ask me!

We (mom and I) had quinoa with soy sausage and sauteed veggies.

I sauteed almost a whole red onion ( I love onion!) with a little olive oil, then I added garlic (2 cloves), a yellow pepper, broccoli, and some lemon juice.

I put that mixture onto some quinoa which was on some lettuce (gotta fill up the plate, Go volumetrics!), and topped all that off with half of a soy sausage for each of us. Yum!

So onto today’s eats…

Breakfast was the same as usual cereal and fruit (what can I say I’m a creature of habit).

For my post-orthodontic snack I had a banana with almond butter. (sorry no picture :/)

By the time lunch rolled around my teeth were really starting to hurt so the answer to that was soup!

I made my self some egg and veggie soup. Sound weird? Well just think of egg drop soup only not 😛

I boiled some veggie broth, whisked up an egg and then slowly poured the egg in, stirring the whole time. Then I added a tiny bit of butter, some frozen spinach, half a can of petit diced tomatoes, some dried basil and oregano, paprika, lemon juice, and some leftover quinoa from last night. It was a huge bowl of soup but very light.

Along with that I had a Flatout with some almond butter and creamed honey, which I thought would be safe for my teeth but I toasted it and that made it harder to chew. For those who don’t know hard to chew = ouch!

It tasted good though!

Dessert was a Chocolate Chip Chewy bar. Can I get an amen for the chewies?! Love them!

My snack today was quite similar to yesterday, like I said I’m a creature of habit 😛

I had a Cherry Vanilla Light n’ Fit with blueberries, cherries, and some cereal.

The taste difference between real cherries and this yogurt was really comical, but it was yummy anyway.

To spare my teeth as much pain as possible I had a little plate of fruit (<3) with my yogurt.

Oh man do I love fruit! This peach pretty much made my day! It was so sweet and juicy without being mushy! Pure heaven.

Hopefully my teeth stop hurting soon so I can eat crunchy things again because I love me some crunchy!

Dinner is still undecided, but it will probably be oatmeal of some kind because I can’t eat much else 😦

Well I’m off to walk my doggies with the madre to get some exercise in today, since all I’ve really done so far is read blogs and watch Grey’s Anatomy!

Peace out!

Elli

Hello! I just wanted to make a quick post to thank everyone who has commented and even just looked at my blog. Just a few days ago I was lucky to have 3 people read this and today I had 26 people come check this little blog out! It is just so cool and amazing to me that 26 total strangers have read something I wrote and some of you actually took the time to comment! So thank you so so much 🙂

Also tonight’s dinner was so yummy I couldn’t wait until tomorrow to share it so I will take this opportunity now to introduce you all to my Tutti-Fruitti Oatmeal!!! She is just plain old oatmeal with cherries, banana, 1/2 a peach, strawberries, raisins, greek yogurt, and a little bit of honey. In person (or should I say in oatmeal) she is pink from the cherries, and oh-so delicious!

Along with my pink oatmeal I had a fruit salad ( strawberries, blueberries, and the rest of the peach.)

Incase any of you haven’t noticed by now I LOVE fruit! As in I could eat all fruit and only fruit all day everyday for the rest of my life and be a very happy girl. Although I might need some carbs in the mix too, I do love me some carbs 😛 But yes I love fruit and I have it every day, and I am very sad in the winter when all these lovely summer fruits are absent, although then there is grapefruit (which I also love)!! Hehe… ok so now we know that I love fruit, moving on.

My run at the gym was a lot less uncomfortable than this morning’s run, although it had a somewhat creepy end. I ran (and walked) 6 miles, and burned 666 calories, luckily it took me 64  minutes not 66 or I would have been really worried 😛 Still kind of creepy though. That’s another little fun fact about me! I am quite superstitious! I believe in karma, and ghosts, and other unexplainable things (not all of them though.)

Another fun fact about me is that right now I am pretty darn tired which is probably why I am just rambling on and on about silly things! So thank you all again for reading my little blog, it means a lot to me!
