Hello!

So I have spent all morning doing reading for school so today has been very boring.

This has been my new best friend (or worst enemy?) for the past few days. I love bio and so I really don’t mind the reading. But I have 4 chapters with about 12 review questions each to read before school starts. So basically I have to read a chapter a week. To do that I need to read AT LEAST and hour a day if not a little more. I hate feeling the pressure like that. I would have started it much earlier in the summer had I known about it. I only found out about it because by chance I went on my school’s website out of boredom and found it! Thank goodness I did otherwise I would have started AP Bio on a bad note 😦

Ok on to the food!

Last night I went to the 7-8 kickboxing class because I had a dentists appointment. That meant that I didn’t eat din-din until about 9:30! Needless to say dinner was about quick and easy, not gourmet. But it was delicious!

A peach, some cherries, and blueberries, with cottage cheese and greek yogurt (and some flax seed). I also had some toast 😛

Today has been rather uncreative.

I had the same old cereal and Green Monster for breakfast, ( it really never changes, I never feel like making anything in the morning) and banana with PB for a snack.

Lunch was a veggie pizza and applesauce. 🙂

It seems like I have a veggie pizza every other day for lunch lately. But its so yummy and packed with veggies!

One of the things that has resulted from trying to eat as low calorie as possible is that I find a few good meals that I know are low calorie and filling and I sort of stick to them for the most part. So because of that there isn’t a whole lot of experimentation that goes on on most days. Every so often I mix it up but I know that certain things (like veggie pizza :P) work for me so it gets easy just to eat what I know is “safe.” I don’t really get bored with what Ie at ever but I going to try to mix it up if I can before school starts and my days get super repetitive.

Trip photos update!

Still no pictures for me. But yesterday we took my memory card to these computer guys near my house. They said they hard software and stuff that should be able to get my photos off the card. Fingers crossed it works because I really want to post some of my photos so you guys can see all the amazing things I saw! And because I still haven’t been able to show my mom! the computer guys seemed pretty confident that they can get my pictures off, and I hope they can! This trip meant so much to me and was really once in a lifetime experience. Sure I could technically to the same route next summer but it was the girls I met on this trip that made it truly special and it would be so sad not to have my pictures to help me remember and to have forever. 😦

Well it’s about time I got back to reading Bio! Hope all is well for everyone!

So…

Do you have a go-to favorite meal (bfast, lunch, or dinner)?

Got any fun and low calories lunch idea you’d like me to try or think I would like?

Elli 🙂

Hello!

I have missed you all and blogging so much but I’m not going to lie the idea of trying to catch up on all my missed blogging is a bit daunting!

As soon as I can I am going to post my pictures from Minneapolis, Boulder, and backpacking but I haven’t loaded them onto my computer yet.

My trip was amazing! not only the week I spent in Minneapolis and Boulder (bother super cool cities) but especially my 12 days of backpacking where I really learned a lot about myself, what I want from my life and had a TON of fun!

The only piece of sad news I have right now is that my camera got a little wet the last day of my trip and I’m not completely sure that it works, at least the screen is broken so I can’t tell if its taking pictures. But I am going to find out if it can be fixed and if not a new camera will be quickly bought! I might be able to use my old camera for awhile but this may be a picture-less blog for a day or 2 until this little debacle gets sorted out!

During backpacking we had to eat a lot more food than I am used too, as you can imagine we are expending a lot of energy so the calories are needed. But we couldn’t exactly carry tons of fresh fruits and veggies so I ate a lot of dried fruits and nuts! The food was delish but far form low calorie so the next few days are all about getting readjusted to the way I normally eat and getting back to working out.

As nice as it is to be back in my routine and eating the way I like again. Its kind of sad being home. It almost feels as though the trip never happened. What I mean by that is the little world I was in out int he Colorado backcountry seems very far away form this world and its hard to imaging that they can exist together. It’s hard to explain but I am still trying to figure out this updated version of myself who I became throughout backpacking and how to balance being home with what I learned out there.

It sure feels good to be eating fruits and veggies again though! Hopefully I will have another blog later today possibly with pictures of some kind of we are lucky!!

Hello everyone!

I’m so excited right now, I’m typing this from my mom’s phone! They have apps for everyrhing now!

Don’t expect a very long post like this because just typing this has taken me forever!

I’m in Minneapolis! We got here wednesday afternoon. We ate dinner that night at this awesome pasta place called Broder’s Pasta Bar. We ate at the “bar” which just looked like a bar but there was no alcohol. From the bar we could watch the kitchen which was pretty cool since being a chef is on my possible career lis

I had lasagna with lamb, mint, and this creamy tomato sauce. It wasn’t what I was initially planning on getting but our waitress said it was out of this world so I had to try it. It was amazing, rich, but awesome.

Yesterday, Thursday, we visited Macalester College in St. Paul. I loved the college and it may be my #1 choice. We ate lunch ate this little Afgani place. They had a $10 lunch buffet which was an awesome deal! I had dahl, this mush of Mung beans and stuff, pita, hummus, and Afgani salad which was onions, cucumbers, tomatoes, and some other veggies with lime juice. I LOVED everything there and if I go to Mac it might become my lunch spot 😛

Dinner was nothing special. We couldn’t find anywhere interesting so we ended up a a kind of touristy place called the News Room. We shared an emanada for an appitizer, then I had a really basic salad with walnuts, grilled chicken, and goat cheese. It was ok but nothing special.

Dessert was cool though. Our waitress reccomended their Root Beer cookies so we figured we had to them. They were fresh baked (they bake them when you order them) and so soft you needed a spoon for the middle (not undercooked though) and they really tasted like root beer. Apparently they use root beer extract to get the flavor.

Now we are in th car on our way to see Carleton College which is about 45 minutes from Minneapolis.

Tomorrow we fly to Colorado! I can’t believe that in less than a week I will be backpacking! I’m getting nervous but trying not to think about it too much!

So that about all I have for you guys right now! I promise lots of pictures when I get back! I will try to update you guys on how Boulder is before I venture off into the wilderness!

Hope all is well with everyone!

Elli 🙂
