I really wanted the Nutritionista’s plan for me to work, but I gave it 2 weeks and I have gained almost 4 pounds in those 2 weeks. And while there are many parts of her plan that I do agree with and that I will keep around I am off to try new things!

What are those new things? Weight Watchers. My mom has done WW many times and lost about 110 pounds with them. she has gained a bunch if it back, but since she is a lifetime member she is going to come with me at least sometimes.

I am going to keep a lot of what I’ve learned from the Nutritionista and use it with WW. For example, I have learned that my life is a lot easier if I just avoid carbs that don’t come from fruits and veggies. I also know that I feel much more satisfied if I eat fat.

So using WW as a guideline to keep below a certain amount of calories I am going to keep eating lower carb (but I am bringing my beloved fruit back!!) and higher in fat. Also still not “diet” foods. If I want a cheese stick I am going to have a real cheese stick, is it more points? yeah. But I know it will satisfy me way more than fake “diet” cheese. Another change is my dessert. I used to have a chocolate Vitamuffin for dessert. I really liked it, but I always craved more food after it. Lately I have been having “ice cream” for dessert.

A mix of frozen raspberries, cream cheese, sour cream, and some chocolate. I mix it all up and leave it in the freezer for a few hours and it is about as close to ice cream as I can get without buying an ice cream machine. And even better when I finish it I don’t crave more I just feel satisfied. On WW I will probably replace the cream cheese with low-fat cottage cheese, but I will keep the sour cream for the fat, which I really believe makes all the difference.

Some other things I ate in the past few weeks that I am going to keep in some shape or form are:

My breakfast: omelette with spinach and cheese with chicken sausage (excuse the Winnie the Pooh plate :P). But on WW I will use a mix of whole eggs and egg whites, less cheese, and turkey bacon rather than sausage. Also fruit!!

My morning snack: Heather Eat’s Almond Butter’s Kermit muffins

My lunch: salad with cheese and turkey and a cheese stick. But I’ll use less cheese in the salad.

Afternoon snack: chicken salad with spinach

But now with a mix of mayo and 0% greek yogurt and red pepper instead of dried cranberries.

Some of my dinners: like snack plates which are super fast and easy

This one has tuna salad, cheese with prosciutto, a hard-boiled egg, avocado, carrots, red pepper, and cheese.

These can really be as WW friendly as I want depending on what I use.

So I am really keeping a lot the same just modifying it. I really think that If I do WW right there should be no reason why I shouldn’t lose weight.

I weighed myself this morning and I gained almost 2 pounds, which brought me to 160.5. Which sucked to see. Since just a few months ago I was 151. But as sad as I am to have gained so much it only motivates me more. I am registering at WW on Monday night and I am going to do everything I can to see 159 a week from now.

So that’s the status of my weight loss… how about another delicious Sunday dinner!!

Chicken with Mushroom Sauce from CL as always (I ❤ that mag!!) This is definitely one of my absolute favs! It was super easy and soooooo delicious I can’t even describe it! We had some frozen veggies from Trader Joe’s on the side.

I hope that everyone has a very happy Valentine’s Day and a great week!

Hellooo!!!

So in my travels through the interwebs I have come across many a nutrition/health blog as you can see from the list of blogs I love you can find here on my blog. Well in one of theses internet adventures I came across Leah a.k.a. YourNutritionista. I couldn’t help but notice that she did consulting and that intrigued me considering I have been epically failing struggling to lose weight (I should mention now that I gained another pound and a little extra last week… yeah I’m 157 and it SUCKS!!!). Instead of paying and rather large sum for months of help (which I may still do :P) I got a one time 40 min consult with her over the phone. So where I am going with this?

Well Leah’s suggestions/ideas/perspective on how I should eat and workout to lose these last #$%$#@ 15s pounds were interesting but DIFFERENT (and that’s even a bit of an understatement). To show you what I mean here are the guidelines she sent me to follow:

– Every meal and snack should focus on protein and fat.

-Grains, starches, fruit, and sugar should be treated like condiments. Really watch your fruit intake!

-Try to eliminate as many processed carbs from your diet as you can, including Vitamuffins, soy milk, diet snack bars, and cereal.

-No “light,” “100-calorie,” or “diet” foods. Real food only!

-Don’t fear the fat –- It WON’T make you fat.

-Don’t worry about portions or calories. Instead, be more concerned with watching processed carb/sugar intake.

-Swap out cardio in favor of strength. Too much cardio can work against you. Try circuit workouts that alternate 1-2 minutes of cardio and then strength.

-Get pre-cooked proteins (chicken sausage, canned tuna or salmon, etc.) so you can easily build meals.

-Consider Snack Plates (2 fats, 2 proteins, 2 veggies, and 1 fruit) for lunch or dinner .

-For dinners, try finding recipes for high-protein/fat casseroles instead of soups for more variety.

(I should probably say now that I am not saying that this is the only way to lose weight or be healthy and that I think there are lots of healthy ways to eat so if you don’t agree with any of her suggestions that’s fine you don’t have to, but how you live is for you to decide and how I live is for me to decide :))

So notice anything about that list?? How about that it is like the opposite of basically everything I used to do!!!! Yeah I’m not going to lie at first the idea of not caring about calories really freaked me out. But I told myself I would give it 2 weeks to see what happened. My mom has a friend who has lost a lot of weight eating low-carb and a lot of the things that Leah explained to me over the phone made a lot of sense. Plus I figured that worst case is that I gain weight which I am doing anyway so what did I have to lose?

So yeah my breakfast went from oatmeal with pumpkin and like 3 different fruits to an omelette (with 3 whole eggs :0) with cheese and spinach and either turkey bacon or chicken breakfast sausage and half a piece of fruit (apple or pear normally). Filling? hell yes!! Low-calorie?? Are you kidding?

Lunch is still salad but with way more turkey, cheese, and more oil and a cheese stick or something on the side.

My afternoon snack is a low carb wrap with chicken salad inside and maybe some cottage cheese with the other half of breakfast’s fruit. And let me tell you I am not hungry again until dinner. My extra snacking has almost disappeared!

Dinner has been a few snack plates (which are crazy huge and crazy good!) For example: 1/2 an apple or pear with some PB, tuna salad, carrots, red pepper, cheese, and dip made of sour cream and sweet and hot mustard. Also for dinner we made a casserole with chicken and pork sausage and cabbage you top it with the same sour cream and mustard I used as a dip above (this stuff is so amazing I don’t understand why any other dip even exists!) we’ll have some kale with it because while it tastes like angels singing its a little lacking in color (try yellow with some brown :P)

I also only went kickboxing 2 times this week (can you imagine?!?) Instead I did some circuit style strength workouts using 2 routines from glamour (1 & 2) I’ll do 5 minutes of cardio (high knees, jumping jacks, running up and down my stairs, etc.) to warm up, the 3 strength moves, then 30 seconds of cardio, then repeat the 1st 3 moves, then another 30 seconds of cardio, then I repeat that process with more sets of 3 moves for about 45 mins. Let me tell you people I have been sore from this!! Its pretty awesome!

So we’ll see how the weigh-in tomorrow goes. I’m sad to say that my jeans have still been a little tight but I’m not giving up yet. No matter what I weigh tomorrow morning I will stick with this for at least another week, and then I’ll decide if I want to stick with it (and maybe pay for 3 months or her consulting which would be really awesome if it works!) or try something else (my mom and I were considering Weight Watchers).

Ok so I know that this post has been a little light on the pictures (I will try to take some pictures of the things I have been eating with this new “plan” if I remember) so to add some color to this post lets talk about last Sunday’s dinner.

We made another CL recipe, this time it was Bacon and Goat Cheese Stuffed Chicken. And yes it tasted just as creamy, rich, and awesome as it sounds.

With it we had some roasted potatoes and broccoli rabe  which to be honest we failed at cooking it was over cooked and bitter… but at least there was some green on the plate.

That red stuff on the chicken is just roasted red pepper pureed with raw garlic and olive oil. This stuff is really yummy, and seriously is good with anything. Next time we are going to roast the garlic with the pepper.

Alright I have to face the music and get back to doing my #$%#$ homework… I hope the your February is going well!!

Au Revoir!!

Elli 🙂

Well… I survived med-terms! I even pulled out a A (ok 89.7) on my AP Psych exam! *does happy dance*

The antibiotics finally kicked in and I am feeling 95% fine. I got to go back to working out Wednesday just in time to get one workout in before good ol’ nature dumbed about 10 inches of snow on us! We have been killed with snow this year and to be quite honest it has lost all that “yay it snowed!” magic… when is is Mayyyy!

I did get a great arm workout shoveling it all though…

This morning I did a double whammy kickboxing workout, thats right folks I did 2 classes in a row! It was hard but kind of awesome (like 1,324 calories worth of awesome!). I think I might do it like once a month or so. It does kind of throw off my eating for the rest of the day though because I am way more hungry which isn’t a good thing the day before a weigh in and also I have to drink a ton of water tore hydrate but then sore muscles retain water so we’ll see what Sunday brings…

One cool thing was that 2 people told me that I looked really good and thinner than last time they saw me! People don’t seem to notice my weight loss that often so I love it when people say something. It was especially nice since I have’t exactly been feeling good about my weight lately. I gained another pound last week and was up to 156 which sucks especially when I was once 151 and I can tell the difference although in jeans and a sweatshirt I may look no different believe me people there is more of me than there was 2 months ago!!

I’m trying not to think about that though… so I’m not going too.

Other than Mid-terms being over and the world being a little too cold and white for my taste not a whole lot went down this week. It will be nice to have school go back to normal this week instead of “holy s**** we have to cram stuff in and study!!!!”

How about we talk Sunday dinner!!

So I know I said we were going to make chicken meatloaf for dinner, but due to a mushroom deficiency we had to go with Chicken Cutlets with Creamy Dijon Sauce instead.

On the side was the worlds sweetest sweet potato and my favorite leafy green kale!!

As always it was totally delish and the sauce was especially yummy even though we had to use half and half instead of whipping cream it was still super creamy and just ah-may-zing.

We also cooked up a bunch of soup for the week.

Split Pea– a personal fav. We out a few cups of it int he blender and left the rest alone so the smooth the chunky ratio was purrrfect.

Then my mom’s everything-but-the-kitchen-sink “soup”– I say “soup” because she uses so many veggies there isn’t much room for broth left so we have to add it as we eat it. I normally add some rice and/or beans to this which just puts the yum factor to like 32!

So there ya go my friends! Believe it or not I have homework that I am now procrastinating on… so I should probably stop now and just bite the bullet 😛

I hope you all had a fabulous January, all I can say it I will be glad when the calendar says February, January has not been all that kind (is it ever??)

xoxo Elli ❤

So as you might be able to deduce from my title I am sick. Sick, sick, sick, sick. And it is no fun at all. I woke up this morning feeling achy, and hot and cold, and weak, and just plain awful. Just to make things even better I was supposed to take the SATs the morning. Well as you can guess that didn’t happen. Instead I went back to sleep until my mom woke me up to tell me I had a doctor’s appointment. So I got out of bed put on some shoes and a sweatshirt and left.

Luckily I returned armed with antibiotics!! Of course antibiotics mess with my stomach like its their job so that will be fun, but hopefully I will be feeling much healthier tomorrow because this week is mid-term exams at school!!! I am actually feeling a little better even now although that may have something to do with the ridiculous amount of sleeping I have done today (put it this way I have spent more of today asleep than awake).

Ok let’s take a little break from the complaining to talk food!

So one of my favorite magazines is Cooking Light. I love that their recipes are super healthy but also interesting and not boring, flavorless health food (or even worse full of fake ingredients). Every Sunday night my mom and I pick a new recipe from Cooking Light to try. I realized that I really need to be photographing this new trend of ours (I have only been subscribed to CL since Christmas so the Sunday dinners is a new thing). Last week we made Sweet and Sour Chicken with Bok Choy and Rice with scallions (the bok choy and rice are our own creations not from a recipe). It was so freakin’ awesome I can’t even tell you guys! And easy too!

Seriously it was so good, the sauce was just the right mix of spicy, and salty, and sweet. The rice was the perfect balance between sticky and creamy and the bok choy was tender but still a little crunchy.

Monday was Martin Luther King Day and my mom stayed home with me to keep me company since I hate being home alone all day (and let’s be honest she was looking for an excuse to take a day off :P) so we decided to make another fun dinner (read dinner we actually put effort into).

We made meat-less meatballs from Trader Joes in “tomato sauce” with tomatoes (duh) and spinach, and leeks. I also added some Prego and tomato paste to make is saucy-er. With that we had polenta!! I honestly think that polenta may just be the ultimate comfort food, it’s just so creamy and perfect!!

The lighting in this picture sucks but so it doesn’t look so pretty but it tasted delish!

Tonight for dinner I am having chicken soup with rice, so I will be “sipping once, sipping twice, sipping chicken soup with rice”! (anyone??) Because nothing makes a sick person feel better than chicken soup! Especially when made with homemade broth!!

Tomorrow we will be making another CL recipe Chicken Meatloaf (this issue is all about chicken so we have been eating a lot of chicken on Sundays :P). So you will see that next week! Well I am off to eat my soup maybe watch Beauty and the Beast (which fate sent me from Netflix just when I needed it!) and then do some more sleeping!

Farewell my friends!

Belle Elli ❤

So a while ago I got a request to do a blog about what I eat in a day. I’m sorry to say that it has taken me this long to get that blog up but it required remembering to take pictures of everything (I am prone to remembering I had to photograph something right after eating it), and then getting all those photos into a blog. But better late than never right? So here you go my day in food…

I start out pretty much everyday with the same breakfast (not that much has changed :P)

Now, however, breakfast starts out with an orange and a grapefruit, segmented, squeezed, and savored!

followed by…

Quinoa and light soy-milk with banana and applesauce to sweeten it, and pumpkin, cinnamon, ground cloves, ginger, and nutmeg and dried cranberries on top! I look forward to this everyday. It is so yummy and filling.

At school I have a mid-morning snack at about 8:30 to 9:00 ( I eat breakfast at about 6).

This is my favorite snack. they are 100 calories and have 6 grams of protein and 5 grams of fiber and literally taste like a 3 musketeers bar only better.

Lunch is salad with turkey, broccoli, red pepper, tomatoes, and mango salsa (normally but not in this picture)

the dressing is just balsamic vinegar, olive oil, a little bit of agave syrup, salt, and pepper!

I also have some fruit, normally grapes, oranges, or apples and then either 100 calories of crackers ( I weigh out 100 calorie portions) or 100 calories of pretzels. Lunch is normally at 11:30.

When I get home from school at around 3 I have another snack

I start out with a VitaTop in one of many flavors, toasted.

The rest of my snack is an apple and some grapes with cottage cheese

I will also occasionally have a Baby Bel cheese and/or a Rye Vita Cracker if I get hungry again before I work out.

Dinner is often some kind of soup

Or I also will have other things like frozen meals (there are some really great natural ones at my local super market) or an egg white omelette.

The biggest change in how I have been eating is that I used to always have toast or something with my soup and eggs and not I am not having that. For me a lot of those extra calories that were keeping me from losing weight came from carbs so by cutting out some of the carbs in my diet I have been losing weight better. I still have carbs but I try to avoid too may “dry carbs” hence the quinoa instead of cereal for breakfast, salad with some crackers or pretzels rather than a sandwich, and some rice in my soup instead of bread on the side.

Dessert is always a chocolate Vitatop or Vitamuffin 🙂

So there you go!

In other news this week I did a little bit too much snacking but nothing major. I gained .8 this week according to my frenemy the scale. I am not sure how much I really gained (if any though) because I did a boot camp at the place where I kick-box yesterday and am quite sore from that. And I know that when you are sore it’s from little tears in your muscles and that makes you retain water and on top of that I drank a ton of water yesterday. Maybe I am just making excuses but I do think that could be a factor because I feel like I look thinner. I am still going to work on not snacking so much this week though. Just taking it one day at a time.

On that note I cam to a little realization this week. I have been really frustrated with my weight especially today when I was hoping to see 153 (losing 1 pound) and instead say 155. I can still remember that feeling of seeing 151 and was frustrated that I am not there.  But I think I have to stop thinking about trying to get back there and just treat this not as losing recently gained weight and just as losing weight like normal. I can’t be impatient with myself. Again I am stuck in the past where I was a different weight instead of just focusing on where I am now. I have to forget that I once weighed 151 and just focus on what I weigh now. I’m not sure that makes sense like it does in my head but that is what I have been thinking…

I got frozen yogurt with my friend again Friday and that was so much fun. Afterwards we went to a coffee shop nearby and had tea and some cookies. It was so nice to just sit and chat with her again! We never see each other in school so its easy to forget how much we have in common. And not just that we both love purple but we have very similar views of the world. I can have conversations with her that I couldn’t have with just about anyone else I know, especially from school.

Speaking of school it is about to get really stressful… Midterms are the week after next, but this week is when all my classes that require an essay for the midterm are giving the essay. So I will have an english essay, a psych essay, and a history essay. I am not at all looking forward to them. They are just theses 3 big looming clouds that I can just see on the horizon and am totally dreading. I will study as best I can for them obviously but that doesn’t really make it less stressful.

To add to the stress I am taking the SATs next Saturday. I have been studying for the math section but that doesn’t do much to help my confidence. I am lucky that the college I most want to go to, Smith, doesn’t require SAT scores so if I bomb them I can just not send in the scores, and I can also take them again, but still 4 hours of testing is not something I think anyone looks forward too.. And then Midterms start that following Monday with my hardest day: AP Bio and AP Psych… ouch!!!

So that is what is going on in my life! Today my mom and I are going food shopping and I have a french project I should work on, I have to read the Miller’s Tale from the Canterbury Tales for english ( I loove them though so this won’t even be hard!), and I need to keep studying for the SATs! I also have to study for my history essay especially and read some of the psych textbook… thank goodness I have tomorrow off from school for Martin Luther King day.

I hope everyone has had a happy and delicious week! If the essays and SATs don’t kill me I will let you know how they go!

Elli 🙂

This week started out great. I was really motivated and feeling great! I burned 690 calories at kickboxing monday night. I haven’t been burning as many calories lately at kickboxing so it was nice to see a big number! Tuesday was also a great night, I lifted weights with the teacher, who I am also kind of friends with, so that was really nice! Then Wednesday came…

Throughout the week my teachers were just piling up the work. On Thursday I was spending the whole first half of the day watching Schindler’s List for US History as a sort of “field trip” because we are learning about the Holocaust (which is a subject I find very hard to discuss as my family was touched by it). Also on Thursday I had a HUGE AP Psych test. Friday I had a reaction paper on Schindler’s List and an English essay due along with a reading check on the next chapter of my history book in the Cold War (which was 30 pages long) I also had a packet due on Friday for AP Bio and a French test. So the plan was to finish the English essay Wednesday night, then study for Psych.

By the time I got home from school my throat was feeling a little sore but I was determined to do my work. I wrote half the essay before half dragging myself to kickboxing. It was an ok class but not the awesome class I really needed to cheer myself up and get my mind of the looming mountain of work I had waiting for me at home. I proceeded to spend all night studying for Psych. I was up until 11:30 trying to finish the extra credit that would literally give me about 18 extra points!

I woke up Thursday morning feeling like my head was in a bubble. I was beyond tired and miserable. I dragged myself into school to sit through the 3 and a half harrowing hours of Schindler’s List, which is an absolutely breathtaking movie that everyone in the world should be required to watch but also mentally exhausting. The Psych test went alright but I finished it suspiciously fast, so I could easily have done really terrible on it considering I was basically delirious I felt so sick and tired. I made it home where I then ate just about every carb in my house and watched too many videos on youtube before somehow regaining enough energy to knock out the history reaction paper and the English essay before going to sleep at 9:30.

But today was better! My classes were all relatively easy today. I was well rested so I wasn’t craving every food in my line of sight. I survived a bio lab involving M&Ms only eating 6 of them! Then today after school a friend of mine who I basically never see this year and I went out to get Frozen yogurt and then we went to a paint your own pottery place. The “fro-yo” was really good! I got mostly just plain tart yogurt with a little bit of chocolate. For topping I stuck to almost exclusively fruit with just a little bit of slivered almonds, peanut butter cups, and brownie bites (but really like almost none of the last 2). It was delicious, satisfying, and fun! It was so nice to just hang out with a friend who I almost never see but really get along with really really well. Especially since lately I haven’t been feeling really close to most of my friends who I see every day! We are hoping to make it a regular friday date!

I didn’t workout today which means I haven’t worked out in 2 days, but I ate much less than normal so I really don’t feel guilty or whatever about that. I am going to kickboxing tomorrow morning, so that will start off tomorrow well. I find that when I workout in the morning its easer to be super healthy all day! I gained about 5 pounds from Thanksgiving to Christmas so I am hoping I lost weight this week ( I really think I did!).

If you had asked me Wednesday I would have told you this week sucked! And yeah I really don’t like school and that was no different this week, but in retrospect a lot of good things happened. I was really hating kickboxing before winter break and I really feel like I’ve gotten my groove back with that. I that alone is enough to make this week good. I am still working on taking it one day at a time but I am working on it at least! Other than really Thursday my eating was really good and I had 3 workouts that ranged from amazing to pretty good! So there you go!! I will try to take a picture of the mug I painted at the pottery place when we get them next week on out fro-yo date! I hope you all had a great first week of 2011!!

❤ Elli

Happy New Year everyone!!  I know I’m a day late, but better late than never right?

I took these pictures in Philly at Penn’s Landing. My mom and I went in and saw the fireworks for people who don’t want to be out at midnight (at 6 at night). They were really awesome.

Then my mom and I walked over to Chinatown for some yummy vegan chinese food. I didn’t take pictures thanks to a dead camera battery, but the food was really good! We ate at this little place called New Harmony, that makes all vegan chinese food. We had steamed veggie dumplings and cold sesame noodles to start then a steamed veggie (bok choy, carrots, and broccoli) tofu, and cellophane noodle hot-pot (which is exactly what it sounds like, a really hot pot that all that stuff is served in) and Moo Shu veggies (veggies that you wrap up with this thick sweet sauce and rice in a crepe/tortilla looking pancakes that tastes nothing like either, its kind of like a chinese burrito). Both dishes were amazing!!! I haven’t had chinese food in a really long time and good chinese food in even an even longer time.

So now it’s officially 2011! I weighed myself for the first time in a while this morning. I had been avoiding it the last few weeks because ever since Thanksgiving I have let myself go a little and I didn’t want to see how much weight I gained. This week I got back on track for the most part though so I knew I needed to just weight myself and get it over with so I could really get back to losing weight. I gained  pounds ( from 150 to 155) which is about what I was expecting but still not fun to see. So now I am back on the wagon and working on taking every day as it comes.

Thinking into the future has always been the way I operated so taking it one day at a time is harder for me than it sounds. There is this part of Eat, Pray, Love ( I love this book so I’m sorry if I’m constantly referencing it) where her sister visits her in Rome and she points out how her sister is always commenting on how she hope she comes back to all the places one day and Liz Gilbert says “but you are here now!”  I am like her sister, always, focused on tomorrow or next year not on today. I think it’s a cause of a lot of my bad moods because I am always thinking about how I want my life to be int he future and how I can get there as opposed to just enjoying where I am now even if it’s not ideal. I am doing my best to keep reminding myself to stay present though.

Today is soup making day in the house. Soup is a frequent dinner for me since it’s a fast, easy, and low-calorie dinner. We are making some “everything-but-the-kitchen-sink soup” that my mom always makes with tons of different veggies that is a staple of my diet, and then some white bean soup with carrots, butternut squash, onions, and sage in the crock pot. so the house basically smells like heaven right now!

Today is my last day of my winter break. Which means I have to go back to school tomorrow! This has been a really nice break, and very much-needed since I have been really hating school lately. I am trying to just enjoy today and not think too much about getting up at 5:30 tomorrow and going back *shudder*

There is not much else to report here so I will leave you with some french toast that I had for breakfast on Christmas Eve morning. I hadn’t had french toast in years ( I know it should be a crime, but its not exactly weight friendly)

Beautiful! I cooked some apples in butter and cinnamon and sugar until they were all soft and sweet then added some cherries at the end, and then topped the toast with that and some bananas and dried cranberries and of course plenty of maple syrup! I can make the actual toast part myself but my mom made it because she always did when I was a kid and there is nothing like it! It literally tasted like my childhood (although I didn’t have all the fancy toppings then)!

So that’s this weeks blog post! I am thinking I will probably end up posting on Fridays normally but we’ll see what happens. Awhile back I got a request to post what I eat in a day and I haven’t forgotten don’t worry. So hopefully I can finish that soon and post that in a week or two!! I hope everyone had a great New Years and I hope you all have fabulous 2011s!!
